The Prairie Farms Faribault cheese plant is located inside the historic sandstone Caves of Faribault, MN. It is reported that the first Blue cheese was created in the natural caves of France. The humidity and temperature conditions of the caves provide an ideal climate for affinage and creating the iconic blue-green ribboning. The Caves of Faribault cheese plant has preserved and perfected this traditional affinage cheese-making technique since 1936, making it the home of the first American Blue cheese. Today, the Faribault facility handcrafts a variety of cave-aged Blues and Gorgonzola cheeses under the Caves of Faribault brand. Explore our products and capabilities below.
